That is as close to raw as you can get without paying outrageous amounts of money - Google for more info. on "truly" raw almonds. As far as raw almonds in the USA it is true that USDA in response to an outbreak of salmonella with untreated nuts requires almonds to be pasteurized. For as quickly as I go thru them, I really cannot afford to spend $10-15/lb. The 3 lb. bag at Costco sells for approx. $15. These almonds make WONDERFUL milk!! I am SO impressed. I will not be able to drink the boxed milk anymore. And, I made a simple cheese from these almonds this evening that I expect will be very delicious. If I can find it near by in organic, I buy it, but there are some items just not available without a drive and search, which I can't do as caretaker for two family members. Forgive my memory, but I know someone in this group has made the statement before, something to the effect that one is better eating fresh and the best quality you can find (be it organic or not) than eating packaged, junk filled processed food. So, we do what we can do. Have to ask, where did you find recipe for that simply almond cheese?
