Truly raw vs. pasteurized almonds

For snacking, it might not matter, but if you want to soak the almonds to make almond milk or something else, it might.  I saw one person asking on a website why the water he soaks his almonds in turns black and if the almonds are still okay.  My guess is they were pasteurized almonds.  The raw almonds have enzymes that help people digest them and get all the nutrients out of them, too.
