I also used coconut milk made from scratch. Another way to make coconut that is fermented is with kefir grains. You don't need a dehydrator to do that. Just water kefir grains and a vitamix. You take the coconut pulp (I wait until I have meat from about 6 coconuts saved in my freezer) and blend it up with coconut water in the vitamix until creamy. Then add some live water kefir grains to the mix and let it sit overnight ( a little goes a long way with the kefir grains so be careful, and leave a lot of space in the mason jar so it doesn't blow the top when it expands). The next morning, take the contents, and blend them up again and you can leave it either plain or I like to add blueberries in and a tad of maple syrup. If too thick, add a bit of coconut water to thin it out. I call this " yogurt " even though its more accurate to say that its kefired coconut meat pudding. Also, it does get very sour as it continues to ferment even in your fridge so best eaten that day. Enjoy! > > I would like to try to make coconut yogurt when I get my dehydrator. I am looking at the following and would love to hear any feed back on these or others. Two of them are Excalibur, and the others are LeQuipe, and Nesco.
