Guest guest Posted September 16, 2008 Report Share Posted September 16, 2008 The points value is for anyone who is doing Weight Watchers…zero is good!<G> But the recipe is great for all of us, with our seasonal veggies… Sharyn ***** 2 cups escarole, chopped 2 medium garlic cloves, minced 1 cup chopped onion 2 cups baby spinach leaves 2 small zucchini, cubed 1 medium sweet red pepper, chopped 1 medium fennel bulb, thinly sliced 6 cups vegetable broth 28-oz canned diced tomatoes, preferably fire-roasted (or fresh if you have them) 1/4 tsp crushed red pepper flakes 2 Tb fresh thyme, finely chopped 1 Tb fresh oregano, finely chopped 3/4 tsp salt 1/4 tsp black pepper 1/4 cup fresh parsley, chopped 1/4 cup fresh basil leaves Put escarole, garlic, onions, spinach, zucchini, red pepper, fennel, vegetable broth, diced tomatoes, red pepper flakes, thyme, and oregano into a large soup pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer, partly covered, for about 10 minutes. Stir in salt, black pepper, parsley and basil. ***Toss in white beans or chopped shrimp for a heartier soup; sprinkle on Parmesan cheese for extra flavor. (These will add points.)
