This reminded me: A couple years ago, the DH and I went to Yellowstone for our vacation, and the last night we were there, having dinner in the only restaurant available (that wasn't serving greasy fried foods), I saw mashed cauliflower on the menu. It was offered as a low-carb alternative to mashed potatoes (which I wouldn't have ordered in any case), so I shrugged and thought, "Okay - why not?" So I ordered it with my dinner. YE GODS!!! In the first place, they must have used an entire container of salt on my serving. But frankly, I'm surprised I got as far as tasting it. It smelled EXACTLY like what people say cauliflower and broccoli and beans do to their gastric functions. Very strongly like that. But I don’t like turmeric, so make it without. But I like cauliflower, usually, so maybe I'll try to make some myself and get a better result. I agree it's a better side dish than spuds. Guest guest Posted August 12, 2008 Report Share Posted August 12, 2008 Yep, have made my own in my dehydrator too. I soak mine for a few hours to remove a lot of the starch before dehydrating.
