The anthoycyanins, which give black beans their beautiful dark coloration, also provide you with an extra rich concentration of of phytonutrients to help combat free radical activity. Prep and Cook Time: 10 minutes Ingredients: 1 head romaine lettuce 1 15-oz can black or pinto beans, rinsed and drained 1 medium avocado, cubed 1 medium tomato, diced 2 oz cheddar cheese, grated salsa lime wedges Directions: Chop lettuce and place on salad plate.
