Guest guest Posted October 10, 2008 Report Share Posted October 10, 2008 I have to agree about the raw hummus or Bean salad. 2 things i I have found: 1. - dont over soak/sprout - it distorts the flavor! 2. - lightly steam until they are tender and then wait for them to cool and drain ( a few hours in the fridge); for some reason they work better? For hummus, they seem to work better if they are not right out of the steam, because they are sort of " drier " and i can process them down to a smaller meal before adding liquids. with bean salad, sort of the same deal. If they are right out of the steam, they are already sort of wet and cannot soak up as much liquid to marinate and get soft. It took a few icky batches till i got it right.
