Guest guest Posted January 8, 2009 Report Share Posted January 8, 2009 QUINOA SALAD2 cups of cooked quinoa1 red pepper (or, carrot could be used), dicedblack olives, diced1 zucchini, diced1 cup of cooked garbanzo beans (or, canned) optional1 cup of peas1/4 cup sunflower seeds1/4 cup parsley1/4 cup lemon juice1/4 cup wheat-free soy sauce or 1/2 teaspoon sea salt1/4 cup olive oil Serves 4-6 Toss ingredients together and enjoy with some steamed greens and a soup if desired.
