For example, carbohydrate molecules are made up of monosaccharides that can only be broken down by the enzymes lactase, sucrase, and maltase which reduces the monosaccharides to the disaccharide level. Protein are made up of polypetide chains that is broken into amino acids by a proteolytic enzyme. Bile is necessary to expose the bonds of fat molecules so that lipase can hydrolyze them. It is all about enzymes creating chemical reactions to break the molecules down to their component parts which make them available to the body. When enzymes in food are destroyed, we leave our pancreas a much harder job to produce the enzymes needed to diges the food molecules. People who eat a lot of cooked and processed foods usually have a larger pancreas, as the pancreas has to work harder. So eating raw foods with your cooked foods is super important.
