You may also want to compare some protein values in kale, collards and any sort of green against animal protein. I did. Spinach came out on top. You can access a very detailed list of nutritional values at the United States Department of Agriculture. The easy way to do this is search for the FAT FREE- The Low Fat Vegetarian site and they will link you. I am sorry I do not know how to link. It will show up very easily by typing fat free vegetarian. OK -- My request I am interested in growing microgreens. Please, refer me to a site or sites where I can get information on how to do this .
