Ruby Poppy Dressing

This is a fun variation salad dressing and low cal too..

made this and used it on some mixed dark green salad lettuce.. w some orange

sections and sliced sweet onions added.

OH MY GOODNESS IT WAS GOOD

3/4 c Red Grapefruit Juice

1 tabsp Olive oil

1 tabsp Honey

2 pieces of Orange zest

2 pieces of Grapefruit zest

2 Frozen Strawberries.

1/2 tsp ground mustard

1/8 tsp Xanthan gum

2 tsp Poppy seeds

Add all the ingredients to the carafe except the xanthan gum and Poppy seeds.

Blend till creamy. Then open the top add the xanthan gum and pulse 3-5 times

until it thickens.. then open the top plug and add the Poppy seed and pulse

several times to blend.

It is only like 30 calories in 2 tablespoons...
