Stewed Lentils and Tomatoes Recipe

Lentils are among nature's finest food offerings for a healthy heart because they're abundant in folate, a vitamin that is essential to keeping your blood homocysteine at a healthy level.

Lentils are also rich in healthy protein, fiber, tryptophan, iron, and a number of other micronutrients that are needed for a healthy heart and good overall health.

Enjoy the many health benefits of eating lentils with this simple and delicious recipe for stewed lentils and tomatoes.

Ingredients:

1 cup green lentils1 can (28 ounces) crushed plum tomatoes (use your garden grown ones )3 large carrots, diced2 yellow onions, diced2 teaspoons extra-virgin olive oil3 garlic cloves, minced2 teaspoons sea saltPinch of black pepper1 tablespoon fresh lemon or lime juice2 cups chicken or vegetable broth2 teaspoons curry powder (optional)

Directions:

1. Cook carrots and onions in olive oil over medium heat in a large pot. Cook for about 8 to 10 minutes, or until onions start to caramelize - be sure to stir occasionally.

2. Add garlic and cook for another minute, stirring a few times.

3. While the carrots and onions are cooking, rinse lentils.

4. Once carrots, onions, and garlic are coked, add lentils, tomatoes, broth, curry powder, sea salt, and pepper. Bring to a boil, then lower heat and simmer with lid on for about 35 to 40 minutes, or until lentils are tender.

5. Remove from heat and allow stew to sit covered for another 5 to 10 minutes.

6. Add fresh lemon or lime juice, add more sea salt or pepper if desired, and serve while it's hot.

Enjoy this hearty lentil and tomato stew on its own, or with a fresh garden salad.
