The very best would be centrifuged coconut oil from www.wildernessfamilynaturals.com as it has no polyunsaturated fats in it. They go rancid in deep frying. I'm not sure but I think cholesterol goes bad too in deep frying and coconut oil is cholesterol free. Coconut oil is mostly saturated fat which is ideal for higher heats.
