Guest guest Posted January 7, 2010 Report Share Posted January 7, 2010 Dilled Vegetable Soup4 cups vegetable stock1 tsp dill weed1 dash pepper1 1/2 cups potatoes, diced1/2 cup onion, diced3 ea carrots, sliced 1/4" thick 2 cups zucchini, sliced2 medium tomatoes, choppedSalt, to tasteCombine the stock with the dill weed, pepper, potatoes,onion, and carrots in a 2-quart saucepan. Bring themixture to a full boil, partially cover, reduce the heatand simmer for 20 minutes. Add the zucchini and tomatoesand cook another 10 minutes or until all of thevegetables are tender.
