Hi Bob,

Butternut squash has too many carbs, therefore it feeds the candida and is

not recommended. I tried experimenting with this over the summer after being

on the program for 6 months with no deviations and I literally could not get

out of bed the next morning after eating it. I had a squash hangover! ;+)

Cooking winter squash doesn't have to take a long time. Cut into 1" cubes and healthy steam. With this recipe it only takes 7 minutes to add winter squash to your Healthiest Way of Eating. You will also enjoy a rich source of health-promoting vitamins A and C.

7-Minute Butternut Squash

Prep and Cook Time: 7 minutes Ingredients:

2 cups butternut squash, or any variety of winter squash, cut into 1-inch cubes 3 TBS extra virgin olive oil 1 tsp orange juice sea salt and pepper to taste Optional: chopped fresh rosemary 1/2 small onion sliced thin, cooked with the squash Also try combining 4 tsp finely minced fresh ginger, 1/2 tsp cinnamon and 2 tsp honey with the olive oil.

Directions:

Fill the bottom of the steamer with 2 inches of water. While steam is building up in steamer, peel and cut squash into 1-inch cubes. Steam covered for 7 minutes. Squash is done when it is tender, yet still firm enough to hold its shape. Transfer to a bowl. For more flavor toss squash with the oil, orange juice, salt, and pepper while it is still hot. Research shows that carotenoids in foods are best absorbed when consumed with oils.

Do you ever whiz your scraps for Vita-compost? You could just dump it on your compost heap.

Butternut squash

I harvested the last of my butternut squash from my garden today and cooked 10 MASSIVE ones in my solar oven. I then scooped out the flesh and made a ton of puree in my new Vitamix-I will use the puree as a base for soups, ice creams, sauces, etc. The freezer is getting full, and I feel butternut soup coming on for dinner. The new VM is getting quite a workout-love it! The solar oven cooks outside, so the only "mess" I had to deal with was a pot of scraps that got dumped in the compost pile and rinsing out the VM container-not bad for a freezer full of goodies!

They are easy enough to roast in a slow cooker or regular oven, but a solar oven would certainly work in OG-I am in the high mountains of Western NC and I use mine year round. Saved the day when we had 14 inches of snow this past winter and no power-I could still cook as usual!
