Hi Sherry

I sincerely thank you for the work involved in posting all the links.

I am super salicylate sensitive and as such NO herbs, other than garlic are allowed in my food supply.

Mint is the number one WORST offender for me, but .....

Aha, it is a member of the mint family but so are a bunch of other things I bet none of us ever thought of as mint (including sage, rosemary and thyme).

Rosemary, thyme, sage, onions, chives, parsley, nutmeg, curcumin, turmeric, pepper, cloves.... on and on and on...... you get my drift? are all high in salicylates and therefore off my list of stuff. It was a huge learning curve for me. Salicylates are the chemicals in the plants which are used (by the plant) to protect themselves from pests and intruders etc..... most of them are highly fragranced, but I could find no information (when I was looking) for the humble and inconspicuous Chia Seed.... until I found a vague reference to it belonging to the mint family - that is when alarm bells began ringing.

It has no fragrance (chia) per se, and not much flavour either, but comes with a host of great reasons why you should eat it. I was adding 1/2 a cup to my loaf of home made bread recipe, and suffering side effects...... that's when the ugly suspicion raised its mighty head. Life is such a learning curve when one is chemically sensitive.

For my recipe for a terrific energy food made with Chia, visit www.quackcenter.com/seedsofrebellion.html. This is something I use at least 3 times a week on either yogurt or oat bran. I didn't eat it while my husband was sick and dying and my adrenals got totally shot. Going back to it seems to be helping with the adrenals.

As I also keep saying, everything seems to work better since I started LDN.

I have been trying to watch for the recipe for pudding promised, but may have missed it.  Wondering if there are some suggestions to use these as I bought a bag and am not quite sure what to do with them.  The lady selling these at the organic place had them soaking in a small amount of almond milk to just taste them.  I passed on that and just bought a bag to try and get some more fibre and healthy stuff into me.

Okay here's my favorite:

1 cup chia seeds

2 cups water

cinnamon

fresh grated nutmeg

cardamom powder

Using a whisk, stir the chia seeds into the water making sure all are mixed and under water. Be very sure that there are no lumps! Allow to sit to absorb all the water, about 15 - 20 minutes.

Then I scoop some into a bowl (I usually get about 4 - 5 servings from this amount of seeds), add spices to your liking in the amount to your liking and mix well together.

Pour sweetened nut milk over the top and eat! Sometimes I even squirt a little agave nectar on the seeds in the bowl prior to pouring on the nut milk. My favorite is macadamia nut milk, but I'm trying to get some almond pulp together so I've made almond milk the last couple of days and it is very tasty.

Oh and this morning I put a squirt of vanilla water on the pudding and it was very tasty indeed.

So you put a tablespoon or two of the gel in the smoothies or a tablespoon or

two of the seeds (which turns into much more when it's a gel)? I feel like if I

only put a couple tablespoons of the gel in, it would be almost nothing....or is

that not the case?

If I buy them ground up already, do I still soak them?

and can they be ground up by themselves in the wet containter (vitamix)?

If it's any help, I understand that all chia seeds have the same nutritional content regardless of color. I'm also going to guess that as long as you drink enough fluids, you won't have a problem if you eat them out of hand.

Yes, I put a tablespoon or two of the GEL in smoothies, soups, etc. Yes, even ground up, they should be soaked, and SURE, you can grind them yourself in the VM. They don't need to soak very long-maybe an half hour, but will gel faster if you use warm water. You CAN soak them overnight, but don't need to soak that long. They will keep a week or so, probably more, but I tend not to store things for long. Never worry about asking too many questions-that is what the group is all about! I'll add here that, especially when chilled, that gel is very palatable on its own. It has a very faint kinda minty-cucumbery thing going. Some people find it slimy but I don't.

Indeed it is yummy! I can (and do) eat it just by the spoonful! I am also known to mix it with homemade gingerale, and freeze it into popsicles!

So if I wanted to eat 2 tablespoons of chia in my smoothie, I would have to add

the entire bowl of gel, correct? Would that be ok to do or is that too much? If

it tastes good as you say, I might just eat the whole bowl to get the nutrition.

I keep seeing people add them dry to their smoothies but now I'm scared to do

so!

What bowl??? If you want two tablespoons, use two tablespoons, lol. I don't measure-I just glop in whatever amount I want at that particular time. Chia gel IS filling, so if you want to use it as a meal substitute, a little more will help with that. Jen, I add 2 tablespoons of unsoaked chia seeds to my smoothie (which makes 4 portions) and just add extra water to account for the absorption, and they turn out just fine. I make our smoothies at night for the next day so it has plenty of time for the seeds to absorb the liquid. I know that smoothies don't keep really well for any length of time but as we get up at 5.15 and leave home at 5.50 every morning there simply isn't time to make them fresh every day, so I make 2 days' worth in one go.

Why would you be sorry?! And incidentally, "wise" as we are, take everything with a grain of salt and examine it with your own common sense--if it doesn't hit you right, don't do it.

Tip for making smoothies on the run.

Cut up everything you want to use the night before and dump in a

ziplock bag.

Put in freezer.

Then in am just dump bag in vitamix and go.

Ya gotta blend a little longer since it's all frozen but still

quick.

Ok, you got me, I will open the chia seed tomorrow morning and soak

to try that minty spoonful!
