I love Old Bay seasoning. I use it mostly on fish when I cook it. It adds a nice flavor. I get it in my grocery store.

According to old bay.....

CELERY SALT (SALT, CELERY SEED), SPICES (INCLUDING MUSTARD, RED PEPPER, BLACK PEPPER, BAY [LAUREL] LEAVES, CLOVES, ALLSPICE [PIMENTO], GINGER, MACE, CARDAMOM, CINNAMON) AND PAPRIKA. Below is what I got somewhere on line on making up your own spices.. (and this is what I use)

The seasoning mix includes mustard, paprika, celery seed, bay leaf, both black and red pepper, cinnamon, cloves, allspice, nutmeg, cardamom, salt and ginger

Here's one I developed from the Emeril's Essence but changed it because his has MSG in it:

Katy’s spicy mix3 parts paprika2 parts seaSalt, (can vary according to taste) I use 1 ½ parts I use celtic grey sea salt2 parts Garlic powder1 part black pepper1 part onion powder1 part Cajun seasoning1 part Italian herbs (try using the food processor for this and the crushed red pepper so it’ll be the same size as the rest of the ingredients.) I grow my own Italian herbs and I use sage, Thyme, Parsley and Oregano in it.1 part crushed red pepper½ part chili powder

I'm thinking of adding ground celery seed I actually grind it all up to make it uniform anyway, the celery seed lowers blood pressure, or well, ok, it seems to do that for me.
