I am a novice sprouter and so far have succesfully sprouted mung beans

and alfafa.

I am going to try adzuki next, but have a concern.

When reading recipes for using beans, they often say that any type of

red or black bean should be boiled rapidly for up to 10 minutes or

otherwise they would be dangerous to eat.

But of course, with sprouted beans the sprouts are not boiled. Are the

sprouts still ok to eat once sprouted and skins removed even if not

boiled ? Maybe its just the skins shouldn't be eaten uncooked?

Anyone know?
