Great stuff! Absolutely! I am on the I Love Dieting Program and eat lots of raw vegetables. I find beets a little spicy (compared to carrots for example) but I would never think they would burn. I presume that you washed them well and then peeled them? Some are quite sweet and tasty. I like them grated in a salad. I'm sad to hear about the liver. It's not for everyone. Have you had it cooked with garlic and onions and left just a little pink in the middle? I think most people have a problem with liver, gizzards, kidney and god knows what else because they've been overcooked. Organ meats are not as forgiving to inexperienced cooking as your average muscle. Overcooked liver is too tough, the taste isn't even close to a liver that has an almost beautific rosy pinkish-red left in the middle. Here is a what our family thinks is a great way to eat beets . Classic Harvard Beets (Sweet & Sour) Boil beets in water. Save some red " beet " water to make the sauce. Peel and cut or slice beets. Put about150 ml beet water in a pan. Add a couple spoonfuls of sugar, some cornstarch or other thickener, 100 ml vinegar, a spoonful of butter. Cook to thicken for sauce. Add more beet water to thin if desired. Add beets. Heat. Serve. If you like sweet & sour dishes, you will love these! I don't know about beets but I know my ginger carrots were slimy, I kept them in the fridge for almost a year and took em out and they are still slimy but perfectly preserved, sour and tasty. My hubby, who thinks all my ferments are weird and wont even eat my yogurt chows on my slimy pickled carrots (I don't think he knows they're a year old though) I want to pick up another fridge and do all my canning this way instead of the " normal " way. Keeps long enough (obviously) and it's easier to know if they are bad (fermented foods stink if they are gone off but normal canning can look and smell fine and be filled with bot toxin.) I want to get another freezer too, then I can freeze the stuff that doesn't keep as long pickled (like fruit). Oh, and no, I haven't pickled peppers. However, make sure to cut off the top and tail, and to peel them. There's virtually no nutrition to be found in the peel and your results will taste MUCH better. I'd also suggest using them sparingly, especially to start. Beets Hi, I've seen a few smoothie recipes with beets and they don't specify cooked or not. Also I use really ripe beets and since they are a tougher vegetable than most I quarter them, especially if they are frozen (remember to quarter before freezing). However I don't use sparingly and have thrown half to whole really large beets in my smoothies. I think they taste sweet and with the right combination I enjoy their flavor so how much is up to your taste buds.
