They are very cleansing - that's the reason for the burn. Even in juicing

books we are warned not to juice it alone.

can beets be eaten raw? ate some last night and it totally burned my

throat

! is it highly acidic? and does cooking remove that characteristic?

thanks, ps. wish I could handle the taste of liver.. right now

Absolutely! I am on the I Love Dieting Program and eat lots of raw

vegetables. I find beets a little spicy (compared to carrots for example)

but I would never think they would burn. I presume that you washed them well

and then peeled them?

I eat beets raw in moderation. Some are quite sweet and

tasty. I like them grated in a salad.

I'm sad to hear about the liver. It's not for everyone.

Have you had it cooked with garlic and onions and left

just a little pink in the middle? I think most people

have a problem with liver, gizzards, kidney and god

knows what else because they've been overcooked. Organ

meats are not as forgiving to inexperienced cooking as

your average muscle. Overcooked liver is too tough, the

taste isn't even close to a liver that has an almost

beautific rosy pinkish-red left in the middle. Grass-fed

liver cooked in this manner surprised me in that it

actually tasted sweet and grassy, in a good way.

I would never ever eat cooked beets, still won't. But freshly shredded raw

beets are sweet and good. So now you're making me wonder if it's worth the

trouble here at home.

So what's so healthy about them?

Besides being nutrition rich, beets improve circulaion by inhibiting

congestion of the vascular system. It's known as a natural blood

cleanser, which benifits the liver. Good fiber too!

For those that live outside the US, is Beets the same as Beetroot, as in the

Red Ground growing Vegetable about the size of a tennis ball?

Sharon - My mother-in-law makes Harvard Beets and I can vouch for the fact

that they are absolutely delicious! Especially for those of us who like

pickly or sweet-sour things. yum!

That sounds like them. Here is a what our family thinks is a great way to

eat beets .

Classic Harvard Beets (Sweet & Sour)

Boil beets in water. Save some red " beet " water to make the sauce. Peel

and cut or slice beets.

Put about150 ml beet water in a pan. Add a couple spoonfuls of sugar,

some cornstarch or other thickener, 100 ml vinegar, a spoonful of butter.

Cook to thicken for sauce. Add more beet water to thin if desired. Add

beets. Heat. Serve.

If you like sweet & sour dishes, you will love these!

aren't beets high in sugar? if you had a yeast problem, beets would not be a

good choice.

The beet tops are a good source of B-17/amygladin or the natural equivalent

of the synthetic laetrile. They can be juiced or stir fried. It is good too

with adding an apple. Donna

Donna...thank you so much for this wonderful information. I'm going to start the

'beet thingie' this weekend. About how much (per day) would you suggest for a

starter...sometimes I overdo a good thing.

Personally, maybe half of a raw beet, cooked, sends me to the bathroom

pretty soon thereafter. Quite a cleansing.. The sliced and diced beets

at the salad bar don't do anything except taste good. Raw, fresh,

freshly cooked, any of them does it for me.

No, this is the first time I'm making them too. I don't know about beets but

I know my ginger carrots were slimy, I kept them in the fridge for almost a

year and took em out and they are still slimy but perfectly preserved, sour

and tasty. My hubby, who thinks all my ferments are weird and wont even eat

my yogurt chows on my slimy pickled carrots (I don't think he knows they're

a year old though) I want to pick up another fridge and do all my canning

this way instead of the " normal " way. Keeps long enough (obviously) and it's

easier to know if they are bad (fermented foods stink if they are gone off

but normal canning can look and smell fine and be filled with bot toxin.) I

want to get another freezer too, then I can freeze the stuff that doesn't

keep as long pickled (like fruit). Oh, and no, I haven't pickled peppers.

a great many beets grown in the US are now GMO... perhaps that's what you ended up with. here's a websit with a little about that:

I juice beets so I see no reason why they couldn't be used raw in a smoothie. However, make sure to cut off the top and tail, and to peel them. There's virtually no nutrition to be found in the peel and your results will taste MUCH better. I'd also suggest using them sparingly, especially to start.

If you are talking about Green Smoothie Girl's Pink Lady smoothie recipe then no the beets are not cooked. I use beets in different smoothies and have never cooked them for that purpose. Oh yeah, I forgot to mention that while I use them raw I do peel and cut the tops off. Also I use really ripe beets and since they are a tougher vegetable than most I quarter them, especially if they are frozen (remember to quarter before freezing). However I don't use sparingly and have thrown half to whole really large beets in my smoothies. I think they taste sweet and with the right combination I enjoy their flavor so how much is up to your taste buds. They usually just toss 'em. If you have a good relationship with your vendor, ask him to save them for you. In fact, sometimes they'll trim them right in front of you.

I grow three types of beets in my gardens, but since I grow organically, the greens are often nibbled on by critters-small price to pay though!
