I just think we modern humans eat an unnaturally large amount of them. Many of the carbs we eat are simply a cheap and easy source of junk calories made available to us only because of the technology of agriculture. The paleo-diet is based on this logic: 1. The ideal human diet is a natural diet. 2. Nature is the state of no technology. 3. Therefore foods that require technology are unnatural and should be avoided. According to these principles, grains and dairy products require technology (agriculture and animal husbandry) and therefore should be avoided. Meat, berries, vegetables, etc, are available to humans without technology and therefore should be consumed. It is said that the natural paleodiet consists of everything that is edible when you're naked with a sharp stick.
