Growing my own seeds

I just harvested some shallots I began as seeds a couple years ago

from a shallot that had bloomed and set seed. I do not know how long

it takes for them to grow into blooming size.

What interested me was I thought the rain and I had watered them well

but I discovered only the top 3 inches of the container was wet and

the rest was bone dry.

I was wondering if the lower part of the soil had dried out like that

all year if that would inhibit the flowering of the shallots or if it

is only that they are not old enough yet to flower?

I had 4 really big onions that had started to sprout on my counter so

I set them in my garden and then ended up covering them with dirt and

they all shot up flower stalks and now I have a whole bunch of

seeds. The onion bulb part split into four. I had a shallot split

into 6!

I was wondering about the shoots that are sold as green onions in the

stores. Are these grown from seeds and do I need a special kind of

seed for them to grow like that and would they be first year onions

or having been grown for more than one year? The organic ones seem

to be really big in diameter compared to the non organic ones. I

wrap them in paper towel in the bag they come in and have them in my

bottom draw of the fridge. I like how they keep growing and making

more shoots from their center.

Even if I don't sprout the onion seeds, I really think the flowers

that made them are pretty. I have quite a few garlic chive seeds

too. I mainly just grow them for the flowers and have yet to try

garlic chive sprouts.

What sprouting seeds are members growing into plants to collect their

own seeds to sprout?

What sprouting seeds are members growing into plants just for the

enjoyment of the plants?

For two years I have grown 2 then 6 garbanzo beans just to enjoy the

foliage and flowers and to watch the pods form.
