Guest guest Posted December 18, 2008 Report Share Posted December 18, 2008 Hi all, I read in " Living Cuisine; The Art and Spirit of Raw Foods " by Loux Underkoffler that even sprouted beans and lentils are a little difficult to digest, I've noticed that especially with lentils they make me a little gassy even if they're well sprouted. The author recommends steaming, blanching or if you're concerned about keeping them raw, put them in a pan with water on low heat for at least 30 minutes. The water shouldn't get above 115 degrees, at this temp you should be able to keep your finger in the water. They also said that even if you blanch or steam them (lightly), though they are no longer raw at this point you can digest more of the nutrients so it's a pay off. But I am happy that sprouting is giving you the stimulus to learn. I'll try to give you a very simplified Botany 101. Every plant has flowers, sometimes they don't look like the things that we are familiar with; what actually makes a flower into a flower is that it has male and/or female sexual parts. The part of the flower that is comparable to the ovary is fertilized by the pollen (from the male part). After fertilization the plant ovary turns into something that is called a fruiting body, a fleshy container in which the seeds develop. This fruiting body is not necessarily a fruit, it could be a fruit or a vegetable or a nut or any other place that a seed grows. So alfalfa seeds grow weeks after the plant flowers and when they reach the proper stage for harvest a giant farm machine called a combine will harvest a whole field of many acres. I had to give up on eating sprouted chickpeas because they give me so much digestive distress. Not just gas and bloating but pain and nausea. I must say, I think I should have eaten this way YEARS ago. I might not have developed diabetes. But I doing fine so thank goodness for that. Great germination rates, good quality seeds, no bugs, and I like to support these folks as they have done so much for sprouting. I get everything in 1 pound bags. Have fun!
