Guest guest Posted July 13, 2010 Report Share Posted July 13, 2010 Squash blossom breakfast hash Heaping tablespoon virgin coconut oil 1 small potato cut in small pieces Two hands full of squash blossom-yes, they are eatable * Any peppers [mild or hot] that might be ripe in the garden-chopped Sea salt and celery seed to taste Two eggs Heat coconut oil in small pan with pepper on high heat, season and add blossoms, chop them into the hash as you turn, then turn the heat to medium crack two eggs in the hash-on top- and cover, when eggs are to your liking serve. This is my favorite breakfast, I'm diabetic and all the book say to limit carbs, but potatoes are a food I've discovered is really good for me, and I don't do grains or dairy so this simple carb is healthy for me. *When washing the blossoms allow any trapped bees to escape, use the flowers that have bloomed and closed- Squash blossoms contain Vitamin A precursor carotenoids.
