I don't think the black turtle beans should be eaten raw. The Sproutpeople website says to cook them. I have no idea what that means about waiting until the alfalfa flowers before eating. Could you provide a link? I'm thinking that farmers might wait until a certain percent of the plant is in flower before they cut it for hay. You can eat the sprouts after 3 or 5 or 7 or 10 days. Whatever you want. Plants protect their seeds from being eaten by producing toxins. These are not deadly, they may give an upset stomach. Both soaking and sprouting help remove the toxins from the seeds. But the larger beans should be cooked.
