Then " lather " it up with lots of Wilderness Family Natural coconut oil for each batch of pancakes I put on it. I haven't had any problems yet! I use LeCrueset cookware from France for everything. It has a cast iron core with a porcelain covering. Cooks beautifully and cleans like a charm Start with only a medium heat then reduce to low. High heat ruins the pans. Expensive but exceptional.. Can be purchased used or even seconds at the outlet store in Albertville. I often find them on eBay. They will last a lifetime if taken care of. I know a person that they have passed them down to 3 generations. They do make one skillet that has a non stick finish, but I look for the plain ones. in Anoka PS. We are on an very tight budget. I know we'd have it forever & so I do intend to get one when I can. But they would just be pans, right? I'd be back to cooking one pancake at a time, or have several pans going at once? I know it's not the end of the world, just a real pain. :-) Thanks. Guest guest Posted February 17, 2006 Report Share Posted February 17, 2006 What I need to make excellent pancakes 1) Farm Eggs, fresh-ground whole wheat flour, good fresh milk (sourdough is best!!) I often add lots of nutmeg, cinnamon, cardamon, and clove. I keep the batter thin. 2) My cast iron skillets (very hot and well-seasoned) 3) Virgin coconut oil (or lard) for the seasoning. I wipe the pan with an oily paper towel between cakes. If you fry up some bacon first, your skillets are ready to bake, just wipe out the excess bacon grease. 4) Big dog to eat the first pancakes (which usually sticks). NONE of the rest will. the very LAST cakes you make will be the ultimate best! 5) Raw butter (lots), Wisconsin maple syrup, organic bananas I prefer very thin, almost rubbery pancakes to the thick " cake " ones. They are easier to make, require far less syrup and brown in all sorts of interesting patterns. Did anyone see the JESUS PANCAKE that got an offer of $15K on e-bay last week? Sometimes its a compromise , white flour seems to stick less I feel like the teflon is more dangerous then white flour once a week. Really they won't miss then take much! haha! Guest guest Posted February 17, 2006 Report Share Posted February 17, 2006 I do the NT buttermilk pancake recipe. I grind WHOLE wheat, add buttermilk (or kefir), then soak it overnight. Again, I use my cast iron griddle that fits over 2 burners. The first 2 pancakes on the griddle don't turn out as perfect as the following. But they NEVER stick!! Not even the first ones! One time I used some kefir that had been sitting in the fridge for a couple of months. It was an extremely sour and yeasty smelling batch of kefir. I didn't want to waste it and thought it wouldn't hurt to try a batch of pancakes with it. I could always throw them out if they tasted icky. I strained out the kefir grains, and soaked the freshly ground wheat in the kefir overnight. It made some of the best pancakes I have had yet!! My dogs love it when I make pan cakes! I hate to admit this is the only time I use a spray oil, is for pancakes. I just got some more coconut oil so maybe I'll have to get some paper towel to use with it for seasoning pans.(I don't use paper towels nor napkins, we use cloth) Kimi (who is praying to be well enough to come tomorrow, I am sitting here with a temp of 100.3 and ache from head to toe! A few months ago we went through a spell of having milk sour quicker than normal. So I used it to make kefir (lots of it) & used it in place of buttermilk in my fav recipe. Awesome!! They make everything from little serving pieces to skillets and griddles, including Dutch ovens of probably 10 different sizes and shapes. Some pieces are discontinued so you have to hunt for them. Colors also come and go, but I find color is not as important to me as being functional. There is a 13.5 " skillet that would serve as different pieces and there is a square griddle. They are closing that store and re-opening in Blaine so every thing is being sold. I think they are at least 20% off now and a good quality.
