I tried a variation on this recipe earlier this week and it was a hit! I

put coconut oil at the bottom of a 9x13 glass dish, put the eggplant down

and then drizzled it again with the co and salt and baked that a bit before

putting the toppings on. I didn't use any sauce as we have tomato allergies

so it was sauce less but still great. The co made the eggplant just the

slightest bit sweet and caramelized a bit and it was so good. We used

cooked ground beef, pepperoni, yellow peppers and cheese for our toppings

and then sprinkled the cheese with a bit of oregano.

another crustless pizza idea

In our house, we make a crustless " pizza " using an eggplant base-- slice the

eggplant thinly (about 1/4 inch), douse in olive oil, and line it up on a

pizza pan/baking sheet, bake until it's pretty soft, 10 or 15 minutes, then

take it out of the oven and top with all your toppings, like meats, cheeses,

sauce, artichokes, garlic, mushrooms, peppers, and don't forget to add salt,

as the eggplant soaks up flavor. Toss it back in the oven until cheese is

golden brown. You can't exactly pick it up and bite into it, but it's

delicious nonetheless.
