Coconut Syrup

(12 servings)

1 cup sugar

1/2 cup water

2 Tablespoons butter

1 teaspoon coconut extract

Combine sugar,water and butter and bring to a boil; boil 5 minutes.

Remove from heat and stir in flavoring. Serve over warm pancakes.

I just googled it and got the usual astounding results. Here's

another:

INGREDIENTS

1 (14 ounce) can coconut milk

1 cup flaked coconut

3/4 cup brown sugar

DIRECTIONS

In a heavy saucepan, combine coconut cream, flaked coconut and brown

sugar. Bring to a boil, reduce to a simmer, and cook for 20 minutes,

stirring occasionally. Transfer to a blender, and puree until smooth.

Serve immediately.
