Hi I checked the analysis by gas chromatography for the Lavender Seville. The only constituent that looks like it might be a ketone is Fenchone at .40%. I am not sure if it is a ketone but it is the only constituent listed ending in the letters 'one'. If Fenchone it is a ketone, is the .40% concentration enough to cause the sweet/fruity (berry) aspect to the aroma? No, fenchone would not be sweet fruity. It's hard to say without actually smelling the product. Sometimes lavender/lavandin absolutes do have a sweet note similar to coumarin, dh coumarin and lactones derivatives. This note is not apparent in the EO.
