I have been looking for nutmeg butter on the Liberty Naturals site and can't

find it. What

category is it listed under? Also, is it soluble in alcohol?

Hi -- look under the Bulk Ingredients, SCO2 -- it's a CO2

extract. It dissolves immediately in alcohol, making a milky

solution. Just let it sit, and the waxy sludge sinks to the bottom,

and you have scented alcohol. I've used the wax (undissolved) in

cooking -- rice pudding, spanakopita, manicotti. Just a smidgin. CO2s

were originally developed for the food industry.
