It doesn't actually measure food consumption but food production that is made available for consumers. In the USA.. Its 3900 kcal per day. Actual consumption data is based on intake surveys.. Which is where the lower numbers you mention come from. Intake numbers based on surveys are probably a little low but more accurate than availability data. In the late 80s the US began to try to more accurately guess actual intake based on availability data and use 2/3s of the number. [NYT January or February/07 "Unhappy Meals"] So this is a big overestimation. There are other numbers that came from peoples report, and you know, in general people underestimate how much they consume. Other numbers come from observing people eating, but anybody being observed will change behaviours. I believe the actual caloric average is irrelevant as people caloric needs differ so much. And about AAAS reputation, in your link it was not clear what that value actually was, if the amount consumed or sold, or some other.
