Would it have a different profile than say spinach or parsley etc.?? Sounds kinda stupid but we went to a farmers market today and got the carrots and decided to try the tops in a soup we made with potatoes and onions and cabbage and carrots. Your best approximation would be to put something in in place of it that you figure might have about the same nutrient content.
