Recently, he also started some beehives and started producing honey using traditional methods which do not heat the honey during extraction. I was surprised at the claims that he made about raw honey, so I decided to do a little searching. It turn out that raw honey has some enzymes that kill bacteria, fungi, and yeasts. Studies such as the following show that raw honey even kills MRSA. Medical-grade honey kills antibiotic-resistant bacteria in vitro and eradicates skin colonization. Of course, since sugary solutions ferment so quickly to make beer and wine, the bees have methods of preserving their sweet honey from getting spoiled by fungi and bacteria.
