I wouldn't expect it to affect enzymes any more than steaming food, since with few exceptions the heating mechanism with microwaves energy is wiggling water molecules at radio frequencies, so fast that they vaporize. It always good to be alert to new evidence, but be skeptical about criticisms of widely used mature technologies. Aren't we about due for a new study bad mouthing coffee? Along the lines of modern technology to be cautious about, there have long been accusations about cell phone microwaves cooking our head meat. One recent study identified a change in blood flow in nearby regions of the brain, associated with cell phone use and proximity. This does not mean that cell phones cause injury per se, but that there is a physiological response to the radiation that deserves more study.
