Cherie knows how to cook it, I know where to buy it and how to eat it... Im not big on cooking!!!!! I am laughing though - it is Buffalo Mozarella cheese. It is soft, like bocconcini cheese - quite similar in fact. It is usually in the shape of a ball and is in brine or salted water of some sort. It is delicious, and hard to get. I used to only be able to get the frozen stuff... but now there is a shop here in Sydney about 25 minutes drive from me where I can get it fresh as they bring it in from Italy weekly. This shop also makes its own beautiful ricotta cheese. I grabbed some the other day when I was there and it was so fresh it was still warm! Yummmmoooooo! Lovely on a cruskit with some strawberries! We are dreadful! Now there is a business for you up there in the territory with all those buffalo's wandering around - milk them and make beautiful mozarella cheese! Mel PS... I really shouldn't speak about Cherie like that - I am sure that she knows about 'EVERYTHING'!!!
