Molasses tastes great and is a nutritional powerhouse, loaded with manganese, copper, iron, calcium, potassium, magnesium, vitamin B6, and selenium—essentially all the good stuff that’s stripped out of sugar cane during the refining process. But this syrupy sweetener does more than make a mean gingerbread cookie. Three easy ways to add it to this week’s meals:• Substitute two tablespoons of

molasses for 1/2 cup of sugar in quick breads.• Combine 1/4 cup molasses with 1/4 cup low-sodium soy sauce, a teaspoon minced ginger, and a dash of olive oil and use it to baste a chicken or turkey or as a glaze or marinade for pork or meaty fish, like wild salmon and tuna.• Whip a teaspoon of molasses with 1/4 cup cream and a teaspoon of cinnamon to make a healthier whipped topping for dessert.
