(1) Sure ! have your lemon juice and water FIRST! then wait about 10

minutes --- if you can, to have the coffee --- you are not counteracting

anything

(2) It is recommended that atheletes have one cup -- not more than one

cup --- of coffee -- a half hour before a workout or event. I think the

first time I heard this was from Colgan, of the Colgan Institute, a

world renowned source for anti-aging and sports medicine.

(3) We who mostly follow a western diet have been taught for years

that coffee is unhealthy, for many reasons.

Yet look back at traditions and how, for about the last 1200 years,

first in Ethiopa, then Egypt, Yemen, Persia, Turkey, North Africa, Italy,

Europe, Indonesia .... coffee, when available has been consumed by millions

of people -- as a tradition, even in religious purposes. And for more than

a stimulant value. Anything used in this manner, to me, deserves further

scrutiny, as I know it has health value.

I, too, thought coffee was always unhealthy until about 6 years ago when

I walked into our biggest health food store and saw coffee roasters for

sale. Huh? COFFEE??? An herbalist in another store told me:

Coffee is actually healthy. Its the way its processed that causes the

problem. People think that caffeine is the problem. Its not. Coffee is

a seed. Seeds contain oil. Oil, when roasted, if it sits around becomes

rancid. THIS is the problem. This is rancid oil -- with free radicals

--- sitting around for a long time Ground up, even.

Coffee prepared from coffee beans (seeds) which are freshly roasted and

then ground and used within about 3 days of the roasting, has significant

health value. And yes, it does have strong antioxidant properties.

Coffee from freshly roasted beans tastes so very different from the

rancid stuff. This is gaining in popularity. You can buy green beans, then

roast them at home in or on the stove or in a coffee roaster. Then grind

them. I introduced this to 2 oenophile friends and they love the nuances

even more than wine! When you have a taste of REAL coffee --- REAL

tomatoes --- REAL chocolate, REAL milk, etc... You know it. You also know

its health value. Your tongue, your body sings.

We had a field trip to the Merchants of Green Coffee, a store which

sells the beans, the equipment. The head nutritionist of the largest

health food store in town provided part of the presentation.
