For those of you who might be interested, Pirello, who remitted leukemia with macrobiotics many years ago and is now a chef on Public Broadcasting in the U.S. recently appeared on a more mainstream television show, on CBS. has several cookbooks out and will be appearing again on the Holistic Health Cruise. Some say she is not really macrobiotic. Some say she is a leader with wider diet styles. Make up your own mind about that. The following is a transcript of her ten minute segment which appeared on Saturday, 5 January, 2008 around 8 a.m. in the morning: Cooks on CBS Morning Show, Saturday, 5 December, 2008 Chef on a Shoestring on our $40 budget This Chef Beat Leukemia Today's Menu Escarole and collard green salad pasta with white beans and tomatoes orange scented chocolate cupcakes "I was diagnosed with terminal leukemia and decided to take a healthy approach. Although what we've done medically is wonderful, they didn't offer me a whole lot. It was a long time ago, and I was afraid of losing my hair. So I opted for a macrobiotic diet and 14 months later I was declared cancer free; so that set my feet on the path I was supposed to be on. I was a vegetarian but a junk food vegetarian. I discovered through macrobiotics what balance is." What is macrobiotics? Whole seasonal food that you eat from the same climate (in which you live), whole, seasonal not processed food, no junk Escarole and collard green salad pomegranate vinaigrette; some honey and pomegranate juice as our base 3X olive oil to balsamic vinegar base Demo is putting salt in oil and vinegar, says, using a salt mill puts the nice coarse salt that I love in the salad. Dressing is sweet and sour for a not so typical salad greens. No Romaine? Says News Lady "No, more bitter greens, endive, blanched collard greens and escarole; in Chinese medicine, which is my specialty, I know that bitter greens help liver function when everyone has overindulged", says . Written on screen: refrigerate escarole and collards 3 days, endive only 1 grapes, pomegranate, tannin rich and key to staying young chia seeds have omega 3. Omega 3 helps burn fat so you don't store. Pasta with white beans and tomatoes garlic and red onion sauteeing, and some chili good for circulation and moves fat don't burn garlic, or chili flakes canned tomatoes, cook about 3 minutes until acidy flavor comes out of the tomatoes. adding white Beans cannellini beans, rich in calcium and magnesium, high in protein, pantothenic acid to help the body not age; be careful of salt in this recipe, because olives are going in, fresh basil, freshness and digestion whole wheat pasta, Italian past whole wheat pasta has 3X the fiber of regular pasta; high fiber, better digestion but you also get a whole grain and then carbohydrates and protein is a complete protein vegan cupcakes: "Not using eggs, how can you make cupcakes without eggs?", says News Lady "For every egg use a tsp of baking powder", says . She continues, "no white flour, bad for digestion, whole wheat flour and mixed with semolina made from a white wheat, which lightens things up but still a whole grain flour because made from a white wheat" For sweetener we use honey, high in antioxidants and iron, vinegar to up our chocolate flavor; (red wine vinegar); almond milk, because high protein, low fat and no sat fat like in dairy, chocolate chips, non dairy; Sunspire. Do not use butter, use oil (no type of oil specified)l "Is it difficult to find these ingredients?
