I recently started fermenting different things (I've never done this before except for yogurt & buttermilk). So far, I've fermented: sourdough (wild yeast) sauerkraut dill pickles bread & butter pickles, yogurt buttermilk kefir kombucha (in progress) fish sauce (in progress) beet kvass It's been great fun! And interesting! People look at me wierd now; but, now that I think about it, they just look at me as though I'm MORE wierd than they thought. :-) Anyway, my question has to do with my sourdough. I started it the beginning of August, and it's only been in the fridge for one 4-day stretch while I was gone. I feed it every morning 1 cup flour and some water. The last few days, when I uncover the bowl in the morning, I've noticed a white dry film covering the entire starter. When I drag my finger across it to see what it feels like, my finger comes away dry. The film is pulled along with my finger, but then it fills in quickly behind where my finger has gone. Hmm.... Is this the yeast living on the top? What is this stuff? ________________________________________________________________________ ________________________________________________________________________ ------------------------------------------------------------------------
