Any student of a college nutrition course learns this in Nutrition 1. Microwaving vegatables is another way of maintaining the nutrients in vegetables. Because microwaving uses very little water to cook food, and foods are cooked fast. How our vegetables lose a lot of the nutrient values is through cooking them in water and the water is poured out there goes the vitamins. I like to use a juicer and juice fresh vegetables, hmmmm tomato, celery, a little mango juice for sweetness. add a onion for spice!! Good stuff.
