This is exactly how you can create a scoby if you don't already have one - From finished KT. Hi , Yes, it definitely could and will. It's the normal behaviour of KT either with or without a solid culture present. The solid scoby mat is the structure the bacteria build during the fermentation process while the yeasts are predominately busy devouring the sucrose .....greedy blighters ;-) BTW, I never put my Kombucha in the fridge, but always leave it on the counter. The KT is so active that I have to strain out the ooglies and 'jellyblobs' daily, but I don't mind - it just looks a bit oogly, especially to newbies to the brew. When I decant KT into my glass, I like to leave it open to the air for a little or longer while and I swear, the flavour becomes almost glorious during that time. Maybe, it's a bit like leaving red wine at room temperature for a while to breathe and develop its most wonderful bouquet.
