Hi All, Has anyone brewed KT for longer than 14 days. I prefer KT on the sour side and find that after 14 days, once bottled and left for a week, it fizzes up only slightly and is a little too sweet for me. I'm in Brooklyn and the temp avgs between 65-70 degrees. Guest guest Posted January 7, 2008 Report Share Posted January 7, 2008 I brew between 21 and 30 days, depending on the temperature outside. I like mine on the sour fizzy side too. When you do your second ferment, if you put a little piece of fresh ginger in the bottle, it will help increase the fizz. I don't think there is any danger.
