i have had my original brew for a month-just broke baby into new jar-temp was

around 62 :)

OK to Brew for Up to a Month?

Hi All,

Has anyone brewed KT for longer than 14 days. I prefer KT on the sour

side and find that after 14 days, once bottled and left for a week, it

fizzes up only slightly and is a little too sweet for me. I'm in

Brooklyn and the temp avgs between 65-70 degrees.

Is there any potential danger in brewing for three weeks or a month?

Hello...simply put...no, there is not.

It may not, however, improve the fizziness, if that is an issue for you.

I brew between 21 and 30 days, depending on the temperature outside. I like

mine on the sour fizzy side too. When you do your second ferment, if you

put a little piece of fresh ginger in the bottle, it will help increase the

fizz. I don't think there is any danger. It's just a matter of taste.

slightly effervescent and cidery-so good it almost broke my heart to slip her

baby off and put new tea in-i wanted to drink it ALL! lol
