She didn't give me a whole lot of starter liquid with it, just a little and added some sugar to the bag, which I stored in my refrigerator until I could make my first batch. My first try I made the tea in a plastic juice container. I didn't have anything else at the time. The scoby was large, so when I was ready to make more tea, I cut it up to fit snuggly into the quart glass jars I acquired. I am trying to be patient and wait the 8-10 days for the new batches to mature. They are on day 4 today. If I drink the tea too soon, do I miss out on some important nutrients? The reason I'm asking is that I do not have any tea to drink today. I realize that not having any is *ok* - but I miss it already! I have looked in the archives but haven't seen this question posted yet. Thanks for any input and I am glad to have found this group! I've been drinking it in the morning in exchange for a cup of coffee, so I was missing it today! I will search for a couple of gallon size jars in the next couple of days. Try not to brew in plastic (Any type) as it can?release toxins that can potentially be dangerous.? It can also affect future brewings with that scoby.? I'm not sure if you just brewed your tea in the plastic and then transfered to glass, but your fermentation should always be done in clear glass container.? I think many people use pickle jars - I personally use a large " cookie " jar that is made by Anchor glass - with the glass lid - its available at Wal-mart for around $13.00 in the housewares section.? If so, go ahead and drink some. Not a problem. Also, start tasting it on the sixth or seventh day. Depending on the temperature it sometimes gets done in sometimes even four days.
