Hi Carole, Being a purist, I really think that using Camellia sinensis is best for brewing Kombucha. 'Cha' refers to 'tea', proper tea which has the nutrients that the Kombucha culture needs for producing proper KT. However, Ed, the Happy herbalist mentions that you can use Rooibos together with proper tea or alternate. 'Guenther and Harald Tietze state in their research as well as their brewing experience that many herbal teas are acceptable because it is the nitrogen that is important for successful brewing. I personally enjoy white tea rooibos tea combination and use equal parts of each. I believe he tannins in real tea (camellia sinensis) are needed for fermentation.
