Hi Carole,

Being a purist, I really think that using Camellia sinensis is best for

brewing Kombucha. 'Cha' refers to 'tea', proper tea which has the nutrients

that the Kombucha culture needs for producing proper KT.

However, Ed, the Happy herbalist mentions that you can use Rooibos

together with proper tea or alternate.

'Guenther and Harald Tietze state in their research as well as

their brewing experience that many herbal teas are acceptable because it is

the nitrogen that is important for successful brewing. We suggest to

maintain viability that every fourth brew be done in regular tea

(Camellia sinensis), or 25% of every brew be with real tea

(Camellia sinensis).'

Hi

I regularly brew Rooibos. You must use a combination of Rooibos and

real tea. I personally enjoy white tea rooibos tea combination and

use equal parts of each.

Probably not ... rooibos is very low in tannins.

I believe he tannins in real tea (camellia sinensis) are needed for

fermentation.
