Guest guest Posted January 18, 2008 Report Share Posted January 18, 2008 Hi All, I'm a newbie to the list and Kombucha. I got my first 'mushroom' a few weeks ago. Made my first brew. It was pretty sour, smells like apple cider vinegar. Anyway, that's not my Q. I made another batch. When it seemed done I took off the scoby and some of the tea and put it in a jar in the frig for later. Then I strained the tea, covered it with saran wrap and set it under the cabinet until I could find a jar to store it on. I brewed it in a crock. I usually cover it with cheese cloth but I was only going to cover it for a few hours while I dug out some jars. Well, I got busy and just forgot all about it. It was probably 5 days until I noticed the crock and took a peak. Low and behold there was a new scoby growing on top. Just a very thin membrane but I didn't know what to do so I just let it sit. Now it has probably been 10 days or so. It is quite large and about 1/4 " thick. The crock has a wide mouth so this thing is about the size of a corn tortilla! What should I do with it. Is it still good? How about the tea? It is all just sitting in the crock on the counter waiting for me to figure out what to do! Any ideas? Thanks!
