Dear Ones,

It's often there, but I think people lose it, because they don't bottle fast

enough. They let it escape into the air.

I find it best to get all your utensils assembled on a table, before removing

the cloth and rubber band.

Then remove the scoby and place it quickly into anything ceramic, handy, dip

fast, cap immediately with a double layer of plastic under the lid, and put

right into the refrig. After that, you put the other things away at your

leisure. Ha.
