Where did you get the glass bottles with the screw on plastic caps? I like that idea much better than the corks or clamp down thingies. I love writing it and will have some great updates tomorrow, but I have lots of photos to download first. My bottles are actually from the woman in Austria who gifted me lots of prepared Kombucha. I'm not sure where she got them, but I will ask her next time we connect. I currently have three batches brewing (I think you guys are saying hotels?) I gave my sister a bottle infused with dried mango and she loved it. I did learn something valuable, dried mango gets big, fat and squish when you submerge it in fizzy liquid. The batch that's brewing is just that - your current brew or current batch. The hotel is different. It is where you are storing your extra scobies when they are not in a current batch. These would be ones that you are planning to give away (whether anyone has " dibs " on them or not - they can be saved for a long time). BTW - your dried mango sounds terrific - i use frozen thawed strawberries, but I bet I would love the mango.
