Guest guest Posted January 27, 2008 Report Share Posted January 27, 2008 Dear Dove, I bottle immediately to keep ANY fizz. Sometimes I have a lot. Sometimes, not much. I try to keep what I have. I don't rebottle. I strain only when I go to drink a glass. First , I assemble all my equipment: large measuring pitcher, gallon glass grape juice jug, scoby-hotel, etc. I don't remove the scobies from my brew until I am ready to go. Then I rip off the cloth and rubber band, grab the new scobies, flop them into the scoby hotel, quickly dip the new brew into my large measuring pitcher, pour it into my gallon jug, and cap immediately with a double layer of thick plastic under the lid, and place it in the refrig. It keeps all the fizz and any buzz and doesn't sour in the refrig, even if kept for weeks. Pove it. Blessings on you all. LOve. MArge.
