Sugar in Kombucha...

Hello everyone. I have been reading about how you all make your tea and I am

concerned about the sugar content. I don't have my SCOBY yet, so I am still

gathering my info.

How much sugar do you use? I personally don't want to use the processed white

sugar. Can I use organic? Can I use something else like maple syrup or honey? My

favorite way to make my jasmine green tea is with honey, so that would be

perfect.

I would appreciate people's opinions and what they have used and tried.

Hi all,

Most recipes call for 1 to 1 1/2 cups per gallon or close to this. You want

to use some type organic cane sugar or some say you can use honey. Honey will

produce a greater amount of yeast and cloudy tea. Agave, maple syrup, and false

sugars will not work in the long run.

Remember that the KT is breaking down the sugars and converting them so it's

not like you are drinking cups of sugar( a COKE has 12 teaspoons in a can). Let

the KT get strong, by longer brewing, if you wish to have less sugars.
