Skye Re: White Tea This thread has imspired me to try using white tea for my continuous brew. I continuous brew 4-5 gallons, so today when I decanted a gallon, I made a gallon of white tea to replace it. That should make my brew about 20% white tea, so it will be interesting over the next few weeks to see how it progresses as I keep replacing what's been decanted with white tea. I had to go to 3 different stores to finally find white tea with no flavorings. I ended up with Salada at a price of around $4.00 for 40 bags (2.5 oz). I did find the Silver Needle organic, but at $9 for a bit over an ounce, I decided on the Salada. They are hard to find here in MN at a good price. Have you ever used the flavored ones. I have one from Celestial Seasonings that is a white tea with plum flavor that I really love. I have thought about using that one, however it is not organic. I'm just not sure if it is ok to use tea that is not organic. Skye Re: ZOE... I do use it when available, but years ago I started with nothing but plain old Lipton tea bags, the cheapest ones I could get and my KT was yummy. All this fancy flavored teas is something new since I restarted my cultures just a few years ago. I must say Im enjoying the variety, but have to add that none of this is necessary to produce a good tasty KT. Neither is all the fancy sugars- altho I really like my unrefined cane sugar - the old white stuff we used to use when nothing else was available, still works! We are very fortunate in having so many choices these days, but lets not get hung up on the idea that we Must use this or that or the Other thing. Keep in mind how long Kombucha has been cultured and what did those originals in the Caucasus have to use ? BTW your flavored white tea sounds like it would make a lovely brew. zoe Re: ZOE... Pesticides and all the wonders (NOT !!!) of modern agriculture were not used to grow plants; Our food was more nutritive and health-giving.. Our foreparents had better food than we do, the closest to what they had would be Organic... So if someone can use truly Organic tea and good sugar in which the good minerals have not been wiped out by the bleaching process, I would think this is the way to go, this is the Ideal situation.. In the absence of the Ideal, white sugar and the cheapest tea will always be better than no KT or (God Forbid) a soda... I would much rather take my chances on todays lot. Perhaps Im just a tad spoiled, but if it doesn't taste good, Im not gonna drink or eat it I don't care how good its supposed to be for me. And by the same token if its not FUN - why bother? Life is just too short. Some tastes can be acquired and even the most mundane of jobs can be turned to fun with a bit of ingenuity. According to their lab testing their white tea showed much higher gluconic acid levels than other teas. Not all teas are equal. A lot of research tying making kombucha with different teas.
