White Tea

I gave my sons a baby a year or so ago, and they immediately changed the

recipe I gave them! They didn't like the strength of the black tea. They

brew with mostly green and/or white, including a peach flavored one, which I

thought wasn't supposed to work. I had some while I was visiting them last

summer, and it was pretty good, but a little too mild for my taste. I've

settled into a blend now of 2 bags each: black, green and white, and I'm

finding it a nice balanced brew.

This thread has imspired me to try using white tea for my continuous

brew. I continuous brew 4-5 gallons, so today when I decanted a

gallon, I made a gallon of white tea to replace it.

That should make my brew about 20% white tea, so it will be interesting

over the next few weeks to see how it progresses as I keep replacing

what's been decanted with white tea.

I had to go to 3 different stores to finally find white tea with no

flavorings. I ended up with Salada at a price of around $4.00 for 40

bags (2.5 oz). I did find the Silver Needle organic, but at $9 for a

bit over an ounce, I decided on the Salada.

I'll keep you posted on the flavor, pH, and sugar content, etc.

That does sound yummy. Right now all I could find at a good price was at World

Market. It was $7.99 for black organic & I got 4oz. I haven't been able to find

organic white. Celestial Seasonings has a great organic green tea.

I realize that the flavorings could make these unsuitable for KT, but maybe not!

Stash also has regular whites. Sometimes you can find the Stash brand at BigLots

stores (less expensive, but not a lot of choice of flavors). Just recently I

bought a dozen boxes of their Peach flavor for iced tea this summer.

CostPlus World Markets usually has Republic of Tea White Peony or just Emporer's

White as well. They have a great catalog and web site too! (Republic of Tea,

that is!)

Hi All,

My brew is about 50% white tea now and is wonderfully delicious! The

color is a beautiful light golden brown and the flavor is delicate

and lovely! It's lost that overripe fruit taste and smell that was

becoming stronger.

If you haven't tried white tea in your brew yet, give it a try.
